AVOLEMONO SOUPA

From G.O.B.C.’s one and only Uncle Yiorgo
Served in his restaurant for decades.
Recipe as told to the Director.

Ingredients:
20 eggs
28 oz. Uncle Ben’s converted rice
10 oz. butter
5 oz. chicken base
1 oz. salt
3 gallons hot water
28 oz lemon juice (bottle)


First Part:
In large pot put water, rice, butter, chicken base, salt
Bring water to boil, cook for about 5 minutes
While rice is cooking
Take 20 eggs
Separate eggs white from egg yolk* in large bowel
Beat the egg white until it becomes very thick
Add the yolks to beaten egg white one by one and
beating together as you go until finish the yolks.
Add 28oz. lemon juice into the beaten eggs
*Keep egg yolk in individual shell


Second Part:
Remove the large pot with rice from the burner after cooked for 5 minutes.
Take pot off burner and set on table after cooked.
Take big ladle and put one by one ladle of hot water into bowl of beaten eggs until the temperature is even with the bowel and the large pot.
Then pour all into the large pot and stir it.
Let stand for a few minutes then serve eat and enjoy.
